One Century Later

Knowing that the 100th anniversary of Titanic’s voyage was quickly approaching, I spent much of my time this week pulling volumes off my bookshelves, immersing myself in any and all stories relating the Edwardian Era. I had done this with the intention of sharing a few of them here and it was no easy feat narrowing it down to only two. The first is a novel by Kate Alcott, “The Dressmaker” and I’ll admit, I haven’t actually started reading it. Well, I’m like 5 pages in. Sigh. Still, if you’re as interested as I am in Titanic and/or women’s studies in the Edwardian Era (No, just me then? Nah. I don’t believe it), it’s a good read. I also wanted to share “Titanic: the Tragedy that Shook the World,”  just for the photographs alone. Stunning.

I’ll be spending the anniversary at the movie theatre with my good friend LauraWe’ll laugh, we’ll cry, we’ll relive our childhood memories of Leo and Kate, and then I’ll most likely trail off into some sort of historical gibberish. Wouldn’t have it any other way.

Strawberry Cheesecake Bites

Well hello there! Long time no see! One month and eleven days to be exact. Sheesh.  But I’m here now, and very happily I might add! I’ve been enjoying the beautiful spring weather here and have so much to share within the next couple of days. So get ready!

I finally joined Pinterest a couple of days ago. Oh boy. There’s no turning back now.  I came across this super easy treat and after posting a photo on facebook, got quite a few requests for the recipe! So without further ado….

Strawberry Cheesecake Bites

What you’ll need:

1 lb large strawberries, 8 oz. cream cheese (softened), 3-4 tbsp powdered sugar, 1tsp vanilla extract, graham cracker crumbs, ziploc sandwich bag (to pipe filling)

Rinse and hull strawberries.  In a mixing bowl, beat cream cheese, sugar and vanilla until smooth. To fill the berries easily, spoon mixture into sandwich bag and snip off a corner – instant piping bag! Once strawberries are filled, dip in graham cracker crumbs. Note from Kate: I really only needed one or two graham crackers for a plate of strawberries, so keep that in mind when getting supplies together (I had a bunch left over).  Done and done!

If not serving right away, pop these babies in the fridge and you’ll be good to go! Heck, I bet they’d even be nice frozen. Or dipped in chocolate chips. Or with chocolate covered strawberries.  Oh man. The possibilities!
